Super-Hydrating Salad

Ingredients

  • Seeds of two pomegranates
  • 4 Persian cucumbers, diced
  • 2 bulbs fennel, diced
  • 1/4 cup fresh mint, chopped
  • 1 tbsp fresh dill, chopped
  • 1 small shallot, minced
  • 1/4 cup fresh lime juice
  • 2 tbsp extra virgin olive or avocado oil
  • 1 tsp honey
  • Pinch salt or to taste
  • 1/4 tsp Aleppo pepper or to taste (or sweet paprika & cayenne)

Instructions

  1. Combine pomegranate, cucumber, fennel, & herbs in a large bowl.
  2. In a small bowl, whisk together lime juice, olive oil, shallot, honey, salt, & Aleppo pepper.
  3. Pour dressing over salad & toss.
  4. Add some pumpkin seeds, pistachios, walnuts, or pecans for extra crunch, heathy fats, & vitamin E.
