Ingredients
- Seeds of two pomegranates
- 4 Persian cucumbers, diced
- 2 bulbs fennel, diced
- 1/4 cup fresh mint, chopped
- 1 tbsp fresh dill, chopped
- 1 small shallot, minced
- 1/4 cup fresh lime juice
- 2 tbsp extra virgin olive or avocado oil
- 1 tsp honey
- Pinch salt or to taste
- 1/4 tsp Aleppo pepper or to taste (or sweet paprika & cayenne)
Instructions
- Combine pomegranate, cucumber, fennel, & herbs in a large bowl.
- In a small bowl, whisk together lime juice, olive oil, shallot, honey, salt, & Aleppo pepper.
- Pour dressing over salad & toss.
- Add some pumpkin seeds, pistachios, walnuts, or pecans for extra crunch, heathy fats, & vitamin E.
