Orange Chickpeas & Rice

Ingredients

  • 1 can chickpeas
  • 3/4 cup orange juice (fresh squeezed or from a bottle!)
  • 3 Tbsp. soy sauce
  • 1 Tbsp. sesame oil
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. maple syrup
  • 1 tsp. corn starch
  • 1/2 Tbsp. Sriracha
  • 1/2 tsp. garlic powder
  • 1/4 tsp. ground ginger
  • 1 cup Rice

Instructions

  1. Drain and wash your chickpeas, set aside.
  2. Combine the remaining ingredients in a bowl and set aside.
  3. put 1 cup of rice with 2 cups of water and cook til ready (20 min)
  4. In a large saute pan, spray some non stick oil on medium heat. Add in your chickpeas and cook for 1-2 minutes. Slowly pour in your sauce and mix to combine. Let thicken up (which takes around 3-5 minutes).
  5. When sauce is thickened up, take off heat and serve immediately on top of rice!
