Orange Chickpeas & Rice
Ingredients
- 1 can chickpeas
- 3/4 cup orange juice (fresh squeezed or from a bottle!)
- 3 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 1 Tbsp. rice vinegar
- 1 Tbsp. maple syrup
- 1 tsp. corn starch
- 1/2 Tbsp. Sriracha
- 1/2 tsp. garlic powder
- 1/4 tsp. ground ginger
- 1 cup Rice
Instructions
- Drain and wash your chickpeas, set aside.
- Combine the remaining ingredients in a bowl and set aside.
- put 1 cup of rice with 2 cups of water and cook til ready (20 min)
- In a large saute pan, spray some non stick oil on medium heat. Add in your chickpeas and cook for 1-2 minutes. Slowly pour in your sauce and mix to combine. Let thicken up (which takes around 3-5 minutes).
- When sauce is thickened up, take off heat and serve immediately on top of rice!
