Curry Hummus
Ingredients
- 1 ½ cups cooked chickpeas (or 1 can, drained and rinsed)
- 2 tbsp tahini (well-stirred)
- 1-2 cloves garlic (more if you like a stronger garlic flavor)
- 3 tbsp extra-virgin olive oil, divided
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp ground cumin
- 1 ½ tsp curry powder (adjust based on taste)
- ½ tsp ground turmeric
- ¼ tsp ground coriander (optional)
- ¼ tsp smoked paprika (for garnish)
- Salt to taste
- 2-4 tbsp water (as needed for texture)
- A pinch of cayenne or chili flakes (optional, for heat)
- Fresh cilantro (optional, for garnish)
Instructions
- Blend Chickpeas & Tahini: In a food processor, combine the chickpeas, tahini, garlic, lemon juice, and 2 tablespoons of olive oil. Blend until the mixture starts to smooth out.
- Add Spices: Add the cumin, curry powder, turmeric, coriander (if using), and a generous pinch of salt. Blend again, scraping down the sides as needed.
- Adjust Texture: Slowly add water, 1 tablespoon at a time, to reach your desired consistency. For creamier hummus, let the food processor run for an additional 2-3 minutes. Taste and adjust salt, lemon, or curry powder as needed.
- Finish & Serve: Transfer the hummus to a serving bowl. Drizzle with the remaining tablespoon of olive oil and sprinkle smoked paprika on top for a bit of color and flavor. Garnish with fresh cilantro if desired.
- Optional Heat: If you like a bit of heat, sprinkle a pinch of cayenne or chili flakes over the top.
