Bacon Jam
Ingredients
- 1 lb smoked bacon
- 1lb yellow onion
- 1 tbsp BBQ seasoning
- 1 tbsp minced garlic
- 1/2 cup brown sugar
- 1/2 cup coffee
- 1/2 cup cider vinegar
- 1/2 cup maple syrup
- 1/4 tsp dried thyme
Instructions
- Cut bacon into 1 inch pieces and scatter in a pan
- Cook bacon until crispy, best over medium heat or it’ll be messy
- Cut onion into 1 inch pieces
- Remove bacon from the pan leaving the grease
- Carefully place onions in the pan with the bacon grease on medium heat
- Add thyme, garlic and BBQ seasoning to the pan
- Cook til onions are translucent
- Add brown sugar, coffee, cider vinegar and syrup
- FOR SPICE: cut Fresnos, chipotles and/or Thai chili’s into the pan. Additionally add the adobo sauce to the pan.
- Replace bacon into the pan
- Stir and cook down til the liquid becomes thicker and you can run a spatula through it and the liquid is slow to close gap.
- Take off heat and let sit for a couple of minutes while you prepare your food processor
- Pulse the mixture in a food processor til ground into a spreadable chunky jam
