Bacon Jam

Ingredients

  • 1 lb smoked bacon
  • 1lb yellow onion
  • 1 tbsp BBQ seasoning
  • 1 tbsp minced garlic
  • 1/2 cup brown sugar
  • 1/2 cup coffee
  • 1/2 cup cider vinegar
  • 1/2 cup maple syrup
  • 1/4 tsp dried thyme

Instructions

  1. Cut bacon into 1 inch pieces and scatter in a pan
  2. Cook bacon until crispy, best over medium heat or it’ll be messy
  3. Cut onion into 1 inch pieces
  4. Remove bacon from the pan leaving the grease
  5. Carefully place onions in the pan with the bacon grease on medium heat
  6. Add thyme, garlic and BBQ seasoning to the pan
  7. Cook til onions are translucent
  8. Add brown sugar, coffee, cider vinegar and syrup
  9. FOR SPICE: cut Fresnos, chipotles and/or Thai chili’s into the pan. Additionally add the adobo sauce to the pan.
  10. Replace bacon into the pan
  11. Stir and cook down til the liquid becomes thicker and you can run a spatula through it and the liquid is slow to close gap.
  12. Take off heat and let sit for a couple of minutes while you prepare your food processor
  13. Pulse the mixture in a food processor til ground into a spreadable chunky jam
